Every year there comes a day where we ALL need some chili … & TODAY was THAT day!!!  After making a quick run to the grocery store for the fresh ground beef, 1 lb per 2-3 people, and some kidney beans, my old faithful Le Creuset pot was brought out and the cooking began. For all of us who like having a lazy day, especially when it is cold outside, this is a great recipe that you can cook and let simmer on your stove ALL day, if you want




1 lb ground beef

1 onion, chopped

1 can red kidney beans

1/2 can stewed tomatoes   OR 1/2 can diced tomatoes ( 14.5 oz can)

1 can tomato sauce ( 15 oz)

1/2 cup water

1 /4 tsp garlic powder

1/4 tsp chili powder

salt & pepper to taste

Serves 2-3 people 




1. In a Staub cocotte ( I love the Pumpkin Cocotte 3.5 quart) over medium heat, combine the beef & the onion. Saute the meat until browned and onion is tender.  Add the stewed tomatoes OR diced tomatoes with juice, tomato sauce, red kidney beans & water.

2. Add the seasonings, garlic powder, chili power, salt & ground black pepper to taste. Bring everything to a boil, reduce heat then to low, cover and then let simmer for a minimum of 10-15 minutes.

*** I use my Staub Pumpkin Cocotte 3.5 Quart ( link above). It is a great piece for ANYONE’s kitchen and allows for the chili to cook all day without over cooking.
