Happy Valentine’s Day! As promised I have added a copy of my home made pancake recipe. For those of you who are not avid bakers/cookers, this is a REALLY EASY recipe that if you run out store bought pancake mix is a GREAT alternative, or even when you get more confident a first choice. Now also note that I originally said “heart” shaped , you can very easily cut them into heart shapes, using a cookie cutter or manually with a knife, but with an infant crying & my husband in a bit of a hurry to get out the door for work, necessity called for me to not waste time cutting.



Home Made Pancakes ( Valentine’s Day Style)

Prep Time: 5 Minutes

Cook Time: 10-15 Minutes ( on Medium Heat)

Total Time: 15-20 Minutes


(4-5 servings; 2 pancakes each)

1 1/2 cups all purpose flour

1/2 tsp  salt ( optional

2 tbsp white sugar

1 tsp vanilla extract

1 1/4 cups milk ( I use Fat free OR 2 % milk)

1 egg

3-4 tbsp melted butter

* Know that you can also add a 1/2 cup of chocolate chips, 1 pureed /smashed banana or both to make this recipe that much more flavorful. 








1. Mix dry ingredients in large bowl, ( flour, baking powder, sugar & salt).

2. Add wet ingredients, milk, melted butter, vanilla extract & egg , using a whisk as you stir one item in at a time. Start with the milk, egg, melted butter, and end with vanilla extract. Whisk batter until smooth


3. Heat a griddle or frying pan to medium heat, use a little cooking spray and once hot, use a 1/4 cup to spoon out the batter.  Allow each pancake to brown and serve while hot.

Will make roughly 8-10 pancakes.
