I’m back and I’m ready to get back into the swing of things! A whole lot has happened since my last post, but the good news is I am now a mother of two beautiful babies, one girl (5) and one boy(2). Life has taught me to treasure those you love, because we never know what might be our last chance to say “I Love You” or even when it will be our final ” Goodbye”.
On that note, I have reached a point in my daily life as a Haute Mom , living just becomes so routine but it’s the small things that should be the most cherished. Tonight on my blog I hosted a small ” Summer Loving” dinner that I can say was easy & simple. The entire meal from start to finish took me 30 mins ( that includes prep & grilling). The menu included Skirt steak on the grill with a side of Chimichurri sauce (Gaucho Ranch Brand) , roasted broccoli, brown rice, a side avocado & tomato caprese salad and some ever fresh cherries to finish it off. The decor was fitting with sunflowers, my favorite, and hydrangeas a centerpiece but the company was even better! ( My dinner photo was deleted by my 2 year old, but my pre-dinner pic is still safe; oh well for the perfect post back)
Pre-Heat Oven 425 degrees
Cut Head of Broccoli into 1/4 pieces
1 – 2 tbsp of olive oil
1 tsp of garlic salt
1/2 tsp of black pepper
Put Foil on cookie sheet. Place cut broccoli in zip lock bag along with rest of the ingredients. Shake bag and once evenly spread, place contents of bag on non-sprayed foil Cook for 20 mins . Stir the broccoli after 12-15 mins.
If you like extra crispy cook for 25 mins.
Skirt Steak is best if you cut all extra fat off before grilling. ( Depending on temperature you like your red meat, will determine your time on the grill.) We prefer a Medium Rare-Medium temp.
Avocado & Tomato Caprese Salad:
1 Small Tomato or Cherry Tomatoes
1 Avocado ( Cut into small slivers)
Buffalo Mozzarella ( cut into 1/2″ thick slices)
1 tbsp Homemade Oil & Balsamic Dressing
Cherries to top it all off! ( Photo courtesy table for seven) I didn’t have enough time to photo our cherries as they were eaten up so quickly!
