In our family, chocolate chip banana bread is a staple in our fridge and freezer, as this simple recipe is both a healthier alternative to a dessert and sometimes just a great food to fulfill that chocolate craving ( for me anyways).

I found this recipe on the internet, but have tweaked it quite it a bit to make it healthier and less calories. I am very conscious about cooking & baking only healthy items in our home and this is a GREAT item that freezes well and can last to up to 2 months if need be. Trust me it won’t last that long.

Haute Mom’s Chocolate Chip Banana Bread

Prep Time: 10 minutes

Bake Time: 60-70 minutes ( 30 minutes w/ foil; 30-40 minutes without)

Total Time: 1 hr 20/ 1hr 30 minutes

  • 3/4 cup granulated sugar

  • 8 tbsp butter , softened

  • 2 cups mashed bananas ( if you have a magic bullet; blend for about 15 secs)

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt ( not necessary, I don’t use in the recipe)

  • 3/4- 1 cup semisweet chocolate chips

Start by creaming the butter, for a good 5 minutes ( great opportunity to measure out all your other ingredients).

Add the sugar, let that cream for another 2-3 minutes. Beat in the  mashed/pureed bananas, eggs, and vanilla. Combine dry ingredients, let mix for no more then 1-2 minutes ( flour, baking soda, baking powder) and then hand fold in the chocolate chips so that you keep the morsels fully in tact.

Pour batter into greased ( I use PAM)  9x5x3 ( will make 1)  OR 4 smaller-loaf pans ( I like the smaller ones, healthier serving size) . Cover each pan LOOSELY , “tented” with aluminum foil . Bake for 30 minutes at 325°.

Remove foil & continue baking for 3o to 40 minutes. Let cool for 10 minutes in the pan and then remove from pan and sit for another 10-15 minutes so you can slice it. Best served slightly warm, or in my case I LOVE it cold.

This is an item that you can serve with brunch, lunch, dinner or even as dessert. Any baked good this versatile, deserves at least a try so let me know what you think!
