A nice refreshing salad that can be served warm or cold…REALLY!?? YES! Mexican Street Corn Salad is a healthy option that is absolutely delicious. Add this to your Cinco De Mayo festivities or just for a good old fashioned family bbq, everyone will be impressed. I personally am a lover of anything corn, but this is top of my HML list!¬†Ingredients:

Yields 4 Servings

1 Avocado

1/2 cup fresh Cilantro ( chopped up finely)

4 ears of corn, freshly cooked or grilled  ( if rushed for time, canned whole kernel corn)

1-2 cloves garlic

1 jalapeno ( optional)

1/3 cup Red onion

2 tbsp fresh lime juice

2 1/2 tbsp mayonaise

1/2 tsp cayenne pepper

Salt & pepper to taste

2 tbsp Olive Oil

2 1/2 ounces Cotija cheese ( add to taste)


Once all the corn is cooked to your liking mix together with remaining ingredients. Garnish with fresh Cilantro or Parsley before serving. Best if served warm right after cooking the corn. ENJOY!!!
